Yeah… I have also had this problem many times. But after the update of FB it has stopped but still occur once in a while. :D I suspect network connectivity the culprit or too many background processes accessing that 2G net. ;) My suggestion is to restart your 311. It had worked for my 311 back then. :D

Well.. The resolution which the phone uses is at 400x240. So, any video which can be cropped in these dimensions will play in Full Screen. If you're downloading videos from YouTube, make sure you download them as 360p (640x360) they'll play perfectly in your phone :)

Actually Nokia does good by not stretching the videos to full width. This will only worsen the quality of content displayed and nothing better.

Yes. There is no another way of adding those apps / games to app drawer…. What i suggest is to open apps when you need and it automatically adds to the screen. Don't take trouble adding in a go... I nearly have 150 apps & games for my 311 and i just open them when i need it. Thats all...

Even having too much / unnecessary apps create error / blank icons when clicked, phone restarts..

Yeah. As singhnsk said, 311's light sensor is not performing as expected. Sometimes it works and sometimes not. For me, it has never worked :P
